Valpolicella Ripasso Classico Superiore DOC 2019

Complex and elegant red wine from the Valpolicella Classico wine region in Veneto, north-east Italy, made from Corvina and Corvinone (65%), Rondinella (30%) and Molinara (5%) grapes. The grapes grow in the hills around Marano di Valpolicella, on vines trained using the traditional Veronese pergola.

In a Ripasso, Valpolicella is given a second life: in February, Clementi lets the wine re-ferment for ten days on the skins left over from making Amarone. It then matures for at least three years in large French oak casks. The result is a wine with the depth of an Amarone, but with more verve.

This Valpolicella Ripasso Classico Superiore DOC 2019 pairs perfectly with stews, red meat, game or mature hard cheeses.
