Nebbiolo naturally reigns supreme: the winemaking is traditional and the wines mature in large wooden casks (botti) of French oak. What makes them special is that these casks are steamed rather than toasted: a deliberate choice by the Chionetti family to keep the oak from dominating.

The Barolo Parussi comes from the cru of the same name in Castiglione Falletto, at around 200 metres, and guarantees a rich style with fine structure. The Barolo Roncaglie comes from higher-lying La Morra, at 300 metres, resulting in an elegant and complex style. Finally, the third Barolo comes from a small plot, vigna Pianpolvere, in the famous, historic Bussia cru in Monforte d'Alba, and offers great ageing potential.
