Valpolicella Ripasso Classico Superiore DOC 2019

Complex and elegant red wine from the Valpolicella Classico wine region in Veneto, north-east Italy, made from Corvina and Corvinone (65%), Rondinella (30%) and Molinara (5%) grapes. The grapes grow in the hills around Marano di Valpolicella, on vines still trained on the traditional Veronese pergola.

In a Ripasso, Valpolicella gets a second lease of life. In February, Clementi adds the wine to the skins left over from making Amarone for ten days, sparking a brief second fermentation. It then matures for at least three years in large wooden casks (botti) of French oak. The result is an elegant, complex wine in which, thanks to those skins, you can recognise something of the Amarone style.

This Valpolicella Ripasso Classico Superiore DOC 2019 pairs perfectly with stews, red meat, game or mature hard cheeses.
